Energy Date Bites
Who doesn’t like a sweet snack during the day? I love having any kind of date bites in the fridge to help combat that afternoon fatigue or sweet cravings – they are also great for kids.
I prefer to add some healthy fat to the date bites in the form of tahini, nuts or seeds. Not only does the healthy fat help one keep a stabile blood sugar but nuts and seeds contain so many great nutrients as antioxidants, vitamins, minerals and fibers.
The ingredients in such energy bites can be varied infinitely and you can mix and match as you like – combine your favorite dried fruits, nuts, seeds and water or some coconut oil. Dried apricots are also lovely to add or some peanut butter – yum!
Making date bites is also a great activity for kids, teaching them healthy habits from a young age and giving them some healthier options to sweets filled with refined sugar.
I have made my share of date energy bites for the past years, and most of the time I just use what I have in the kitchen. But I have found out that some combinations are better than others – take the tahini date bite…ohhh my they are just soooo delicious – it took me some years to realize what a great ingredient tahini is in desserts especially with dates. The two combined are just divine and here I thought tahini was only useful in Middle Eastern cooking.
So you really need to try these date bites with tahini rolled in roasted sesame seeds – I am sure you won’t regret it!

Tahini/date energy bites:
Yields 20-22 bites
Ingredients:
300 g pitted soft dates
60 g tahini
30 g sunflower seeds
Roasted sesame seeds to cover the bites
- Process all ingredients in a food processor until a uniform batter is formed.
- Divide the sticky batter in 20-22 parts and roll each to form a ball/bite.
- Roll the bites in the sesame seeds.
- Keep the bites in an air tight container in the fridge.
- Enjoy!

These have a yummy taste of cocoa and are packed with fibers, healthy fat and can be eaten all year and any time of the day. So what are you waiting for? Easy to make and easy to eat ?.
Chocolates/date energy bites:
Yields 20-22 bites
Ingredients:
300 g pitted dates
30 g almonds
15 g pumpkin seeds
15 g flaxseeds
20 g cocoa nibs
20 g cocoa powder
1-2 tablespoon water
30 g almond flour to cover the balls
- Add the almonds and pumpkin seeds to a food processer and process.
- Add the flaxseeds, cacao nibs and powder and process until it forms a batter.
- If needed add water and process again.
- Divide and form the batter info small balls/bites.
- Roll the bites in almond flour or for example desiccated coconut, freeze-dried berries or chopped nuts of your choice.
- Keep in air-tight container in the fridge.
- Enjoy!
