Grain Free Buns
These grain free buns are great for every day, you can use them for any meal of the day and they freeze well.
Living healthy and eating grain free can seem as a difficult task for many – the key word here is preparation. If you are well-prepared and have grain free bread ready you can always have a quick meal, even on the though and stressful days, without compromising with your lifestyle.
The buns are easy to make and they take now time to prepare, as the resting time is very short. I like to shape my grain free bread as buns, this way I can make a little sandwich in no time or take a bun with me when I am on the go. They go with whatever topping you like: jam, butter, nut butter, eggs, hummus, avocado or whatever you prefer.
Make sure to make a large batch and freeze them, this way you will always have bread ready for your meals.
Grain Free Buns
Yields about 12-14 buns.
Ingredients:
2 dl sunflower seeds
1 dl flaxseeds
1 dl sesame seeds
1 dl hemp seeds (can be substituted for another kind of seeds or juts more sesame seeds)
1,5 dl coconut flour
½ dl fine psyllium (flea seed shells)
1 teaspoon salt
1 teaspoon vanilla
6 eggs
3 dl water
- Heat oven to fan 180 degrees C.
- Mix all the dry ingredients in a bowl.
- Add the eggs and water and mix well.
- Cover the bowl and let the dough rest for 10-15 min.
- If the dough is too sticky you can add a little bit coconut flour.
- Shape the dough into buns and place on a baking tray covered with baking paper.
- Bake for approximately 40 minutes (make sure they are done as ovens are not all the same).
- Allow to cool on a rack and enjoy. Keep cool and refrigerate after 1 day.
