Cinnamon Apple Cake

This healthy apple cake is the perfect fall cake – when apples are ripe and have the richest taste. Try my healthier version of an apple cake, it is without refined sugar, grains or dairy thereby supporting your way into a more wholesome life with more clean eating.

I must say I love a good cake or dessert with fruits and especially apples. They are sweet, sour with a lovely bite and go perfectly with cinnamon. Who does not love cinnamon? Well, I know some people don’t, but I am quite sure many people love cinnamon and associate it with cozy times, when the weather becomes cooler and we spend more time inside.

Apples come in all sorts and are accessible all year around so you can bake this cake whenever you wish – I guarantee it will taste good any seasons you might bake it.

The cake is easy to make as long as you have a food processor, alternatively you could use date paste instead of the dates and chop the nuts finely and mix it all with a mixer. The cake is great for having guests over and can easily be made the day before. Serve it with an almond or coconut crème fraiche or simply some coconut creme mixed with vanilla – your guest will love you for it.

Cinnamon Apple Cake

Makes one 26 cm pie/flan tin (deep-sided and loose-bottomed) or a springform.

Ingredients:

Cake

400 gram dates (pitted)

300 gram almonds

4 table spoons melted coconut oil

6 eggs

1/2 lemon (zest and juice)

1 teaspoon baking soda

1 teaspoon cinnamon (you can add more if you love the taste of cinnamon)

A pinch of salt

Filling

2-3 apples (thinly sliced)

1 teaspoon cinnamon

1 teaspoon coconut sugar

  1. Heat the oven to 160°
  2. Prepare the tin by either buttering it with coconut oil or line it with baking paper.
  3. Add the dates and almonds to a food processor and process until it forms a batter.
  4. Add the coconut oil, eggs, the lemon zest, cinnamon and salt. Mix well for a couple of minutes, stop and scrape the sides down and mix a bit more.
  5. Stir the lemon juice with the baking soda and add to the batter. Mix well and pour the batter into the tin.
  6. Place the apple slices on top of the batter and press them down a bit, laying them so they overlay one another a bit. Add the cinnamon and coconut sugar om top of the apple slices.
  7. Bake for approximately 45-50 min, check that the cake is cooked before removing from the oven.
  8. Let cool and serve with some almond or coconut crème fraiche or coconut crème with vanilla.
